Creamy Silken Tofu Pasta
Ingredients
- 1 block silken tofu refrigerated
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 3 tbsp nutritional yeast
- 1-2 tbsp dijon mustard
- 1 lemon juiced
- 2 tsp salt start with 2 tsp and see if you want more
- 1 pinch black pepper
- ½ cup soy milk probably also fine to use coconut milk or just pasta water in a pinch
- 1 splash of pasta water optional
- 1 package of pasta cooked
- optional topping ingredients such as basil, fresh or dried parsley, red pepper flakes, cherry tomatoes, baked tofu
Instructions
- Boil pasta according to package instructions.
- Warm oil in a pan over medium. Sautee the minced garlic for 1-2 minutes, stirring frequently so it won't burn. Pour both the warm oil and garlic into a blender. Set the pan aside; we will use the same pan again in a minute.
- Also add the silken tofu, nutritional yeast, mustard, lemon juice, salt, and pepper in the blender. Blend until smooth and consistent.
- Transfer the sauce mixture to a warm pan and heat through until bubbling/simmering. Give it a taste and add a little more salt if needed.
- Add the cooked pasta to the sauce, stir, and top with anything desired (i.e. basil, dried or fresh parsley, cherry tomato, baked tofu). Enjoy!
