Vegan Strawberry Cold FOam

Vegan Strawberry Cold Foam

Cold foam made from aquafaba (the liquid that comes in chickpea cans!) I used to think this sounded gross but it's really just starchy bean water. And it tastes GOOD. I've recently used aquafaba to make this cold foam and also swiss meringue buttercream on a cake and people told me they would've never known it was vegan & loved it!

Equipment

  • hand mixer with whisk attachment or stand mixer

Ingredients

  • 1 can chickpeas
  • cup organic cane sugar, vegan
  • 1 tsp vanilla bean paste
  • ½ cup freeze dried strawberry

Instructions

  • Pulverize the strawberries either in a blender/food processor or simply by placing them in a plastic bag and smashing them repeatedly with something heavy like a metal water bottle until it's a fine powder. (Plastic bag method is good when you feel lazy and don't want to dirty extra dishes but more finely pulverized powder gives a nicer color to the cold foam).
  • Place a colander over a bowl and drain the aquafaba (chickpea liquid) into the bowl. Set aside the chickpeas, we aren't using them!
  • Using an electric mixer or stand mixer, whisk the aquafaba while gradually adding small amounts of sugar until all the sugar is combined.
  • Continue whisking/whipping the aquafaba for ~10 minutes or until you get stiff peaks. Then, add the strawberry powder and vanilla and mix until combined.
  • Place the cold foam on top of your favorite iced coffee, latte, or matcha drink! Top with extra crushed freeze dried strawberries for a pop of color.
